In a separate bowl add brown sugar, sea salt, olive oil, and garlic and mix well, add ground pepper coffee mixture and mix well. In a shallow roasting pan rub mixture into roast, pressing in to stick. Rub all sides of roast.Roasting times:450 degrees for 15 minutes (do not open oven dooor) turn down heat to 325 degrees. Roast 2 hours or until desired doneness. 135-140 internal degrees for med. rare, 150 for med.,155-160 for med. to med.-well-done.
